St. Patrick's Day Open Line

Three Cheese Beer Fondue
Ingredients:
3C Shredded Extra Sharp White Ceddar Cheese
3C Shreeded Swiss Cheese
4t Fresh Shredded Parmesan
3T Corn Starch
1 Can bottle of Irish Stout Beer (Guinness, etc.)
2T Steak Sauce
2t Worcestershire Sauce
2t Garlic Powder
1/2 t Ground Dry Mustard
 2t Hot Pepper or Tobasco (optional ingredient)
Fresh Ground Pepper to Taste

Combine white cheeses and corn starch in a bowl and set aside. Taste test Irish stout. Stir beer, steak sauce, and other dry ingredients together on medium heat.

Stir in cheese mix 1/2 to cup at a time into the stout mixture in the fondue pot. Looking for a thick & smooth consistency. DO NOT let it boil. Season to taste. Serve with bread, veggies, etc.


Easy Irish Soda Bread
1 tablespoon baking soda
1 tablespoon sugar
4 cups flour
1 1/3 teaspoons salt
1/4 teaspoon cream of tartar
2 cups buttermilk
1 tablespoon butter

Thoroughly combine baking soda, sugar, flour, salt and cream of tartar. Make a well in the center. Add buttermilk and mix lightly and quickly with a fork.

Turn out onto a lightly floured board and knead for one minute. Shape into a circle, about 1 1/2 inch thick. Place on a greased cookie sheet. Slash a large cross in the top.

Bake in a preheated 375°F oven for 40-45 minutes.

Cool on a wire rack. Brush top with butter while still warm. Cool before slicing to serve.

Variations: 1 cup raisins, craisins, citron or dried fruits and a few tablespoons caraway seeds may be added. 1/2 yogurt or sour cream and 1/2 milk may be substituted for buttermilk.


Chicago Dip
1 10oz package of frozen chopped Spinach, drained
1C Sour Cream
1C Mayonaise
3/4 C Chopped Green Onion
2t dried Parsley
1t Lemon Juice
1/2t Seasoned Salt
1lb loaf of italian bread for bread bowl

In large bowl combine spinach, sour cream, mayo, lemon juice, salt, green onion. Refrigerate.
Cut circle out of top of loaf of bread to make bowl for dip. Spoon dip into bowl and place into preheated oven at 350 for 8-10 minutes to toast bread bowl.

Serve with bread pieces or Pita chips.

Put in blender (to taste)

Mix to taste
